I mill my own flour and was having a hard time (as a new home miller) getting perfect loaves of bread. My old bread recipe ceased to turn out perfect loaves.The lady in charge of our co-op advised me to use lecithin and rice bran in the bread to try to get it to rise more. After searching for a long time, I found this product and it had the necessary ingredients, so I ordered it. My bread has since come out perfectly every time!The recipe I use is:2 cups hot (not boiling) water2 TBSP honey2 TSBP extra virgin olive oil1 tsp salt2 TBSP sour cream4 cups finely milled hard red wheat, hard white wheat, or kamut2 TBSP dough enhancer2 1/4 tsp yeastPut into the bread machine (I use a Westbend high rise bread machine) according to machine's instructions on dough cycle until finished. Remove and put into greased USA Pullman pan. Let rise then bake on 350 for 25 mins with lid on. Remove lid and bake for additional 20 mins. (Check the consistency of your dough in the first 3 minutes to determine if you need to add more water. You want a slightly sticky dough.)I store my bread in a lock & lock bread container and it stays fresh for about 5-7 days (if it lasts that long).
